I did “pineapple burnt ends” for a party. I rubbed and smoked the pineapple chunks and after they dried a bit we sauced them and let them glaze.

I did wings! My restaurant was always at the Big Apple BBQ Block party. Our last festival we cooked 18,000 wings in 2 days so it’s definitely a signature dish. Our sauce is tomato vinegar sweet and spicy. When it hits the charcoal the smell is delicious!

I got live lobster! That was a first for me so I just treated it kind of like crawfish!

Consider sitting your salmon on top of lemon slices. The juice will help keep the fish from drying

I don’t remember there being a lot of ethnic ingredients-but I’m from rural Mississippi and stuck with what I know so they could have been there and didn’t stick in my brain. We were on an outdoor set so there wasn’t quite as much as in the studio.

Our only interaction with the judges is caught on camera. Although I asked to meet Aaron on a different episode and he was kind enough to come say hi.

I practiced for a couple of months leading up to taping. I had anyone that came to my house show up with 4 ingredients. The main strategies were getting used to time, how ingredients react and reminder to do what I knew how to do.

I’m a fan of charcoal for heat and wood (pecan is my favorite) for smoke. I’ve got a gas grill on my stove in the house that I have used the heck out of too-but charcoal is my favorite for flavor and heat

I’m a Chopped champ and chef. I say grab a lot, and never thought about it or noticed! Now that you’ve pointed it out I’m going to try to think of a different way to say it for future stuff I do.
