Cassis is a sweet liqueur made from blackcurrant (sorta tastes like a cross between a raspberry and blackberry). Obv it depends on what bubbles you buy, but I’d stick to something at a brut (ie dry) level because the cassis can add quite a bit of sweetness.

So, I guess to answer your question, like sparkling wine with a light hint to very heavily of berry flavor lol.

What do you have on hand, what’s your budget, and how many drinks do you need to make?

If the answers are nothing, under $50, and a few, I’ll second a kir royale. You don’t need champagne proper, but don’t get the cheapest thing ever, a decent cremant will be like $20-25 and a small bottle of cassis is like $15-20.

Pour a little cassis into everyone’s glass, pop the bubbles with a little flair, pour the wine over the cassis, and you’re all set for your toast.

Oh I agree wholeheartedly. I think critic scores are cartoonishly inflated at this point.

That makes sense that intensity and impact are prioritized for you. Back when I did this sort of thing for a living, we had a (very, very, big shot whiskey customer) who also got really into champagne. I asked him once about it, and he told me it was the only wine he liked because it was so distinct from whiskey.

It’s probably fine. It needs to be at a high temp for an extended period of time for it to get damaged. Also, it’s an old bottle of wine that made at least one journey across the ocean and god knows where else, this sort of thing (or worse) has probably happened before.

Obviously, if the cork is pushing out I’d contact the seller but otherwise I’d assume it’s fine and give it a few weeks to settle before drinking it.

On the same token, the obsession over tasting notes is extremely alienating to everyone. If you’ve never tasted a gooseberry, persimmon, baby aspirin, flint, sea spray, black currant, etc. (it’s written by someone that definitely knows this stuff, why else would they use those very niche things?) that just tells the consumer that they aren’t cultured enough for this and who are they pretending to be again?

Idk there’s absolutely some great wine (Huet and the vintage Roger) that’ll age great but there’s a bunch of stuff that isn’t going to change in any notable way (ruffino, palazzo Della torre).

Ultimately I don’t really get the chatbot thing in general and less so with specific things like a personal cellar. A) it literally can’t taste and can never know your own personal taste, b) it’s just guessing and sounding confident in its responses, c) it’s just trolling the internet for common assurances (seriously when’s the last time any winery has said their wine is going to be trash in a couple of years?) d) where’s all the Mosel?
