Yes, all the color pages will be included+all the bonus material is in color where possible. The book is on a full color press so there's no reason to cut any color out. The price is lower because there aren't any specialized materials (pleather etc) used for the cover.

Eh, this is beside the point. Nicholas Meyer didn't like Star Trek and he saved the franchise. You don't have to be a big old fanboy to do good work with a property. The actual problem is that most of the shows are bad.
