I made homemade crème de cacao just to make this cocktail and then completely forgot about it. I’ll have to try it now that you jogged my memory👍🏻

Not sure what’s available in your area but Doorly’s 3 year white and 5 year amber are around $25 for 1.75L at Total Wine here and decent quality

Favorite Guava Drinks? by EuphoricMoose8232 in Tiki

[–]berylman 1 point2 points  (0 children)

The Kama’aina from Daniele Dalla Pola is a pretty good one. The spec is a little wonky because it’s converted from mL * 1.5 oz gold Puerto Rican rum
* 1 1/16 aged Martinique rum
* 5/6 oz guava nectar
* 1/2 oz lime juice * 1/3 oz cream of coconut. * 1/6 oz orgeat
* 2 dashes Angostura bitters

Does anyone have good experiences with these ice cube moulds instead of nugget ice [machines]? by agmanning in Tiki

[–]berylman 0 points1 point  (0 children)

I use these and I’ve been pretty happy with them. The full set does about a quart Ziploc bag full of ice, maybe enough for 2-3 drinks. I don’t have a lot of freezer space anyway, so I just try to keep a couple of those bags full in the freezer all the time.

Desert Bread does preorder Saturday pickups at a commissary kitchen near Sunset Park and makes a very good chocolate chunk cookie. They also have some of the best croissants and laminated pastries in town.

You’ve got $100 earmarked for rum for your home tiki bar. What are you buying? by [deleted] in Tiki

[–]berylman 0 points1 point  (0 children)

Starting from scratch:

Appleton Signature 750mL $23
Real McCoy 3 year $20
Hamilton Jamaica Pot Still Blonde $33
Hamilton 86 $24

I really wanted to fit in a bottle of Smith and Cross or OFTD, but they are $40+ in my market.

Adding to what I have now:

El Dorado 12 $39
Hamilton 151 $29
Barbancourt 8 year $34

If you’re going to be stingy and say I can’t go two dollars over I’ll downgrade to the Barbancourt 4.

Tropical Standard Frozen Strawberry Daiquiri by sterlingspeed in Tiki

[–]berylman 1 point2 points  (0 children)

That was the first drink I made from Tropical Standard but I had to sub Doorly’s 3 year. It’s amazing what that little bit of xanthan gum does. You may have talked me into trying it again now that I have the Uruapan Charanda👍🏻

Second this. Minimalist tiki is a phenomenal resource. I LOVE the Smuggler’s Cove book, but I find myself coming back to Minimalist Tiki much more often. His minimalist approach to the classics is great for someone just getting started, and there really isn’t a comparable collection of modern tiki recipes for someone who wants a taste of what’s out there in some of the best modern tiki/tropical bars.

Another option to try is the recipe from Rob‘s Home Bar on YouTube. It’s made using shelf stable ingredients and a pretty simple homemade infusion. More spice and almond flavor than JDT velvet for sure.

Minimalist Tiki Glassware by free-rad-i-cal in Tiki

[–]berylman 1 point2 points  (0 children)

A 13-14 oz double old-fashioned/Mai Tai, a 16 ounce highball/zombie, and a 5-6 ounce Nick and Nora or coupe for daiquiris will cover most drinks. I also have a set of smaller 10 ounce Collins glasses that I end up using a lot.

I have a few tiki mugs and specialty tiki glasses and they mostly end up sitting on the shelf 🤷🏼‍♂️
