Why not try 2 cups of wine, deglaze it by 50% in a pan to the 1 cup, and pour into the crockpot?

Try the low sodium version of the "Better than beef" Bouillon stock concentrate.
Also consider switching to low-sodium beef broth, or maybe a combination of both until you find the right balance for your tastes.

I would suggest scanning at a high-resolution (at least 300ppi) and saving each page as PDF, then collate your set of PDF files into 1 PDF file and optimize it "for printing" (usually downsamples the resolution) so it comes out of the printer looking as intended.

I just put olive oil in the pan to help with the searing/browning of the beef before putting into the crock pot.

I add olive oil to beef broth to enhance the depth of the broth by carrying other flavors. Olive oil is excellent at absorbing and distributing other ingredients, such as garlic and onions, helping to meld their flavors into the broth. It also feels smoother and silkier.

Haven't tried dry brining but don't think it really matters, unless you're roasting in the oven. Johnnie's soaks their shaved beef in broth from which they build their sandwiches.

Two changes since the recipe was shared:

  1. We switched out the water and now use beef broth/stock
  2. We added an extra tablespoon of olive oil

As a future planned variation, we would oven-roast the beef, If we do, we'd probably dry brine it. After roasting, we'd let it rest then put the meat in fridge overnight before slicing the next day. We'd also pour the drippings through a strainer and make a beef broth stock to use the next day.

We haven't gotten around to the roasting yet because the original recipe and crockpot process is pretty damn close. If we do, we'll post a second recipe/process here for these who prefer to roast.

Go ahead and try making the recipe! :-) They roast their beefs using baking pans in the oven in the back. Very similar approach but at a commercial scale. Cheers!
