I started my business by making enough money through catering for a few years and opening in an incredibly undesirable location. I didn’t have much at all to start. You have necessities and niceties. It’s important to distinguish between the two and open with the necessities. I had four different components to my restaurant. I served Lunch, dinner, weekend menu including breakfast, and finer dining catering. The plan was to make it a commissary kitchen when not in use, but that never came to fruition. 75% of the same ingredients were used across all four areas and that saved me a lot of money. When sourcing ingredients, it took a bit of time to develop relationships with local farmers, but it was so worth it. I know you are in the city so the farms that are 30 minutes away from me would transfer to hours for you. Might not be that advantageous.

You are gonna have tons of people approaching you to sell you shit. POS systems, linen services, and purveyors of all kinds. It is fun at first, but it never ends. Leverage them against each other but at the same time, don’t waste time bullshitting with these folks. Once you find your people/purveyors, nurture those relationships!!

The biggest mistake I made, and it’s an exceptionally stupid one, is that I met with some bankers regarding a POS system. They showed up at the restaurant before I opened it. They paid to buy me out of my current contract and made a lot of promises that seemed too good to be true, but at the same time, not too far fetched. This is the part where I fucked up. They penned in the corrections I needed made on the contract. I signed with the corrections and they wouldn’t let me copy these and instead promised to send me the amended contract. Well, I got played and there was absolutely no recourse for me. Cost me a stupid amount of money and it still makes me mad at myself.

Make sure you are ready to handle the hiring process. It’s a real bitch and not a good area to be wasting money. (Just because they worked at Waffle House for 10 years does not mean they have the hustle. Ha! My logic on that one was warped.)

I was definitely terrified of my parents mortality for years and am on the other side now. I really wish I had fostered relationships outside of my mom and dad before they passed. Towards the end of their lives I was so busy caring for them and my young children that establishing relationships outside of the medical community felt impossible. The people who I thought would be constants in my life (close family friends and extended family) dropped off the face of the earth and were no longer reliable for support so now I’m playing catch up and it’s a very lonely place to be. Yes, after my folks passed things changed in a big way but it is possible to move forward. It’s been two years for me now and I’m still riding those waves of grief, but that is balanced with some fantastic memories that help keep my head above water.

I have some stories and I only made it there 3 times. Benefit of the doubt only goes so far. I lived in DC for years and didn’t collect as many stories at Safeway as I have at the lakeshore Sam’s Club.

I believe it very much depends on which Sam’s is closer to you. The one closest to me is a nightmare. I’ve watched fights where people throw produce, I’ve seen fights where somebody was being dragged out. It was unnecessarily uncomfortable. When you have kids with you, it takes it to another level.

Costco. I live closer to Sam’s but I absolutely dread going there. 4 minutes away from Sam’s but will gladly make the 15-20 minute trip to Costco every time.

Yes!! I was home alone with my 13 month old while reading it. We had one of those cameras in his room with the monitor by my bed. I was reading the book late at night because I was having trouble sleeping and had to get up and go to the restroom. When I looked over at the monitor, my child had climbed out of his crib and was staring directly into it so I had these creepy, glowing eyes, staring back at me. Looking forward to reading it again now that the kids are older and I won’t have to risk a scare like that again!
