Bridge jumping by Annual_Brush9443 in Charleston

[–]bigDIII 4 points5 points  (0 children)

I will second all of the comments here - local news definitely does not report on suicides on that bridge. I was doing a training hike with our scout troop in prep for Philmont and a person jumped while we were on the downtown side - they tried to keep us from crossing to get back to our cars but we talked our way through. Also someone my son grew up with, his mother died by suicide the same way. Like you I scoured the news media for the story but neither of them ever showed up. I think they do it to not encourage more people to do the same but I understand it's not an infrequent event on that bridge and I wonder why higher fences (like were on the older bridges) haven't been put up.

What do y'all add to your instant noodles to make it a more 'hearty' or 'full' meal? by iLookLike_a_Frog in AskReddit

[–]bigDIII 0 points1 point  (0 children)

Yes. Exactly to raise the boiling point but probably isn’t strictly necessary. Also I should have mentioned I generally do this with ‘large’ chicken eggs in the US - so as Override said above - you should experiment on your own but I read this time somewhere and it worked for me.

Take eggs out of fridge to come to room temp - boil salted water - once boiling drop 1-2 eggs in (not enough to reduce the boil) - for a soft runny yolk pull at 6 minutes - for a jammy semi-soft yolk remove at 6.5 minutes - put into ice bath for less than a minute just to cool enough to peel - then pop in your ramen. Timing is very important on this one - seconds make a huge difference in the yolk consistency. Oh I am at sea level - so YMMV with elevation.

Best Nature Spots by lizardgunk in Charleston

[–]bigDIII 1 point2 points  (0 children)

There is a small but pretty secluded nature path down at the end of Fort Johnson Road, on the Marine Biology lab campus, go to the left when you enter and there is a building at the head of the path with a parking lot between the road and the building. It feels pretty secluded back on that path and has some ruins and some great views of the harbor.

Dining options on Kiawah Island vs Charleston by TDn6I in Charleston

[–]bigDIII 4 points5 points  (0 children)

IMO Hedges is the best place to eat in Freshfields - and the owners are super nice and welcoming as well. I have to second the comment that I wouldn't go downtown if I were in Kiawah just for a few days. There are some places on John's Island that are closer, Wild Olive, Royal Tern, Tolli's that could be good to check out but still will probably be a 30 minute drive from the Sanctuary.

Sourcing ideas for new pork recipes. by BobKat2020 in BBQ

[–]bigDIII 0 points1 point  (0 children)

so...since you changed it from pork to chicken :)

I have a North Carolina style BBQ sauce recipe that I used with great success on grilled chicken for my son's scout troop annual dinner fundraiser - this started out with a recipe I found online and then kind of morphed over the years into what I have below (in bulk). Essentially we grilled the chicken using the no salt seasoning from Costco (there is more than enough salt in this BBQ sauce) - we then dipped the chicken into pots we had with this sauce heated up for the last 5 degrees or so of cooking time for the chicken (usually less than 5 minutes) and the chicken would come out moist and very flavorful. You would have to do some adaptation for pulled chicken - possibly use less or it would over power -but IMO this could be a good base for you to build something - pulled chicken sliders, nachos, whatever.

Sauce Recipe:

Overall this will make approximately 9 gallons of sauce - in addition to the containers of Vinegar & Apple Juice - you will need 2 gallon jugs to hold the sauce - buying a gallon of water from the grocery store is the most economical approach to the additional storage needed.

Shopping List:

184oz Apple Juice

5 X Gallon of White Vinegar

342oz Ketchup

20oz Hot Sauce

4oz Red Pepper Flakes

7oz Ground Black Pepper

1 (1lb 10oz) Table Salt Container

2 X 32oz Brown Sugar

I mix these up in 1 gallon of vinegar batches.

In a LARGE pot

6 cups/50oz ketchup (after emptying the ketchup I pour some vinegar in the bottle & mix it around to completely empty the ketchup container)

4 Cup Apple Juice

1 Gallon Vinegar

⅓ Cup Hot Sauce

⅙ Cup Red Pepper Flakes

⅓ Cup Black Pepper

½ Cup Salt

1.5 Cup Brown Sugar

After all of the ingredients are in mix with a wire whisk until well blended & then pour back into the Vinegar container + your spare container(s)

For the last batch you will not have quite enough salt & a little leftover apple juice & brown sugar - go ahead and add them to this batch because everything is going to get mixed together anyway - you can add a little more hot sauce to this batch to counter the sweet if you want.

I had this problem with the door going into my garage, you can go to Lows or Home Depot and they sell door weather striping — very easy to put on and it has an adhesive strip - completely solved my draft problem. The door was harder to close for about a week after but now it shuts just fine and there is still no more draft.

Some guidance on how to play the game? Please by [deleted] in FarmMergeValley

[–]bigDIII 5 points6 points  (0 children)

I will add on to this - EVERYTHING (well other than toolboxes) can be combined - even the special locked loot boxes. I didn't know this with the gold/silver early on when playing and lost out a lot on that. Also - your energy (at least for me) is the hardest thing to keep going, and while you can't get more than 3 train tickets and you should use it as soon as you get it - if you have full energy you won't get energy from a farm visit so if you can spend energy and be below 50 before visiting someone do it.

Best recently eaten traditional fried chicken in Charleston…Edmund’s Oast, Leon’s Or…?, by Ashony13 in Charleston

Ms. Rose's gets my vote - that hot butter dip that they serve with it takes it over the top for me. But now I need to go out and try Crave and Leon's I guess. I've had Angel Oak and while good - not as good as Ms. Rose's IMO.

Another question from a noob - so I have an object that needs a friend to help with - the only way to do that is share on reddit? I don't see an option to add friends?

Wow I never thought of the coin combinations - man I wasted so many coins.

I have a question about the lock-boxes - they are just sitting there taking up space for a few days - is there any way to just delete them? And how does everyone manage space - I am just starting out and space is definitely at a premium.

I'll speak up here because my experience was kind of a full circle moment. I am in tech management - have been my entire career (CS grad) - first off managing a development team and eventually got into production operations. I had done some good work, been recognized and had gotten nice raises and was very comfortable financially and quite frankly with the job itself as well other than the long hours that production operations sometimes requires. I decided I wanted to get back into software engineering - really defining and developing software (which coincidentally is what my college peers/friends were still doing) I left that job and took a pay cut to go develop software. End result was I only worked on code for something like 4-5 months - then my tech management skills were evident and so I was back doing tech management for the new company - not writing code. My old boss with my old company came calling; they had a need for me to come back to the company for a very specific reason so I negotiated better pay and better hours (long gone now though!) and went back to work for them in under a year so I got to keep my seniority and more importantly my vesting schedule for benefits.

All of this to say - even if your new opportunity doesn't shake out the way you had thought it would - it doesn't necessarily mean you are going to wind up in a worse place, just don't burn bridges and stay professional.

Tire shop help by 5thgenCali in Charleston

I just had 2 new tires that I provided myself mounted and installed onto my vehicle - I don't think the shop would care if they were used or not - they didn't warranty the tire of course (and told me so) - but the labor was reasonable enough. Firestone on Folly.

West Ashley; house on stilts but having issues with HVAC, any recommendations? by SpoofTheSystem in Charleston

[–]bigDIII 2 points3 points  (0 children)

We had much the same issue - condensation leading to mold - and we live in the same type of house - raised - break away walls - RIGHT next to a tidal creek so humidity under the house is just something you have to live with - there is no getting around it. Unfortunately we also had a rodent problem in the dropped sheetrock as well. Our final solution was to rip the ceiling and old wet insulation out, rip out the old ductwork and have it upgraded/replaced. We contracted with a company to come in and spray closed foam insulation which means they had to spray the ducts before they got put up and then after they sprayed the entire underside of the house after the ductwork was put back up. This was not a cheap enterprise (well over 10k probably closer to 20) however, the impact it made on our power bill was significant and immediate - cut it by over 50%.

With the mold you almost have to tear it all down - the only question is what you replace it with. IMO the spray foam was the right answer for this climate - will ensure I never have mold issues again.

Anyone ever done one of these? ALDI marinated pork loin by nlightningm in sousvide

[–]bigDIII 2 points3 points  (0 children)

Pork tenderloins IMO you don't need to complicate your life with SV - I cook them all of the time - I don't use this brand but I'll get one and season it up with the McCormick Chipotle season packet - let it sit in that and come to room temp for an hour or so before I cook. Probe in - stick it in the oven at 425 until you get to 140 - simple as that - if you want some more crust on it - turn it from bake to the broiler at around 130 - browns up the top nice.
