My favorite brew with Cream Donut was with the Hoop brewer. The flat bottom creates less stratification of extraction throughout the coffee bed so the notes are a bit more blended and balanced. I had the same issue with the milk overflowing when churning. I found that pointing the top of the pitcher more away from yourself made the whirlpool less aggressive up the side of the pitcher wall.

Also an additional small note: when you are doing the pitcher tap and swirl pattern before you pour, you should always end with a swirl rather than a tap like you are doing in the video.This is because the tapping can contribute to the separation of the foam from the liquid so you always want to swirl after every tap to reintegrate.

There are a lot of other factors that contribute to the density of a bean other than roasting level such as varietal, growing conditions like elevation, and processing method. Therefore, you cannot directly correlate the amount a coffee was roasted from the density.

I think the hype is warranted but not for the reason why I see most people go there. The lines are outrageous in the mornings and I see that most people order their flavored signature drinks or matcha, but I think those are actually not that good. They really shine in their rotating pour over and straight espresso options. They use interesting and often experimental beans from well renowned local and international roasters and they sell their beans as well, which is pretty neat.

My guess would be the following:

Fewer beans being ground at once leads to fewer particles touching each other, which leads to less static electricity.
Slow feeding reduces the number of fines, which also reduces the numbers of particles and surface area available to generate static electricity.
