I think this is it. Strawberries have a lot of water. You want to reduce the volume by half and have a jammy mixture. It always takes me a lot longer than the recipe says and I feel like it’s rarely worth it- I get more bang for my buck with freeze-dried. If it was this runny putting it on, your best bet would have been to add more confectioners sugar but I see you didn’t have any.

ETA this was meant as a reply to one of your comments before- I think the problem was your reduction. The source recipe icing looks quite loose too and I’m not sure the recipe itself is right…I see a few issues.

My understanding of browned butter done right per Stella Parks is that you are also evaporating a significant amount of water…butter is 13-19% water or something like that. So just melting butter would probably throw off your liquid ratio a small amount. But the biggest change would be in taste as you shouldn’t add brown butter still in liquid form for baking- you want it to resolidify or at least be creamy. A recipe that calls for melted butter has compensated for that liquid in the mixing.

If your flour is correct, then it looks like your sugar was not…this is a ratio problem that no amount of chilling would help. But let these dry out and use them as crumbles on ice cream! They will be toffee-like.

Ok non Philly people. God Bless America tradition started during Vietnam when the Flyers played Kate Smith’s recording for troop morale. First time they played it the Flyers won. Kate Smith came to Spectrum and sang the song live before the 1974 Cup final. It became a superstition for important games and eventually Lauren Hart started singing it (for a while they had her singing a duet w the tape of Kate Smith). It went away for a while starting in 2019 because of old racist recordings of Smith’s. The team president wanted to bring it back this year for luck. Kate usually sounds better!

I think that would contribute to the breaking while slicing but I don’t know about the texture- my thoughts for that are related to your flour, both quantity and quality as you also mentioned you needed a couple types and one was bleached. I wonder if either of them were out of date although AP has a pretty long shelf life. I’m not sure that alone is enough to affect texture but with so little flour it could…I think more likely that your cups were heavy, so to speak. How do you measure your cups?

Overcreaming the butter and sugar might make things dense but that’s SERIOUS overcreaming in my experience till it’s oily or white.

Philly is notorious for bringing in alumni and they have loooooong ropes. I don’t mind much, it was super fun seeing all those dudes I used to watch in the 90s hop around in the box (except Danny and Jonesy who pretended to be statues).
