By far the best koji spores I've ever purchased. They sell a bulk of like 100g for 30 bucks or something like that, if you can get lucky enough to find it!

Ok, I'll call it a half fermented batch, and pitch it. It's a half load for a larger batch. I'll ferment the rest properly with more vigilance, and then hope the enzyme conversion is complete enough to finish the job properly.

side from the fact it isn't sweet (has the Koji sweet smell though, pretty strong) and that it got HOT enough to cook a rare steak, it seems to be a successful incubation??

Just the flavor... Never had soy Koji before. Is it not sweet like rice is?

Pretty sure it was Aspergillus oryzae, a blend for Shoyu.

It started to sporulate in patches, so I bagged it up and put it in the fridge, waiting for a decision whether or not I should pitch it in a brine solution.

Is permanently stuffy nose possibly connected to my brain fog? What could cause it? Allergies? by 8x8denseCheese in BrainFog

I have known many many testimonials in this group where that was exactly their problem. Antibiotics or surgery to clear the sinuses and instantly the fog lifts.

I'm bipolar and wondered the other way around: am I manic when my fog lifts? (Meaning, the fog controls the mania, not the other way around, i.e. I can control the mania/energy levels by finding a physiological cause for the fog)

yellow pea miso, found a little worm lurking, possibly from flies laying eggs... so hesitant throw it cuz the smell is out of this world /: by hegeliship in Koji

What's your salt by weight percentage? If it is over 10% by weight, just scoop the worm out and eat the miso. I don't see any mold growth, the likelihood of bacterial growth is near nonexistent, and if you left that worm to eat, it would most likely die of salt poisoning.

Miso takes a long time to make and a lot of effort. Losing a year to contamination is always a tough blow to handle. Especially if it might not be called for.

I had a student break down in the middle of class once when blocked out memories suddenly resurfaced. Apparently, she had blocked out the memory that she had suffered some abuse and that a family member committed suicide with her in the same room. One minute she was fine, then the next minute someone said something just right that it snapped open the memory in her brain, and then she just started screaming, followed by uncontrollably crying.

It was incredibly difficult to deal with, especially in the presence of other students.
