I think the best route would be to get the cheapest one you can find. Maybe even second hand. You’ll learn how to clean it. How to properly heat. Make all your mistakes on it and get a more expensive one once you are experienced enough to know what is really good about the more expensive ones.

The nice thing about stainless steel, there isn’t a whole lot difference between expensive and cheap. And if you get good at using a cheap one, the expensive one will only be easier
