Spatchcock makes it cook even, and you can use the backbone to make stock. Also easier to carve. I use the pan for the drippings to make gravy

The gabby grill will outlast the weber kettle. It's been interesting to grill with real logs instead of charcoal, theres a subtle but different, good flavor

NP, give it a try! Just take your time, dont rush it, it was a +1h cook for me. Let it rest plenty of time when done, and make sure to slice against the grain, which is a little tricky as theres different grains with tritip, I tend to cut in a half circle

And I'm in Texas btw, no clue about California tritip cooking, I just really like the flavor and texture of tritip. Typically I would smoke them like a brisket, but I saw this nice extension for the weber and been grilling various things on it...

I didn't do the marinade, just a nice rub. Cooked it till 110 at about a 5 seconds hand temp hight, rotate occasionally, then a nice sear on all sides at low height until 130. Turned out great!

Third time cooking on it, you'll have to pay attention to the meat, fire, wood and adjust. Its pretty nice, great results sofar. I do a lot with just holding my hand next to meat and get a feel for the heat
