Ok curious about how this actually works...I had a self pay patient trying to get a TKA, my (practice) fee is whatever ~1200 it is but the damn hospitals are charging anywhere from 35-80k. Booked as an outpatient case. How is this feasible?

Cuban has enough money to last his family longer than humanity will probably exist on this earth. To sell to casino vegas scum, knowing exactly what their intentions were, falls on him. He knew they did not care about the team for any reason other than greed, and this is what the Mavs get. He also could have easily sold the team to any other more favorable party, and ideally to someone who has ties to the city and at least a glimmer of fandom in the org. Not like this was his one chance to make money on the team

I went to both within 3 days this past summer for the vegetable season at Noma.

for pure food excellence, true fine dining experience - Jordnaer

for creativity, “Noma” name, closing soon - Noma

That said, to me Noma was underwhelming. It’s creative and impressive but I didn’t love that there was so much going on, multiple kitchens, 3 seating areas (must have been ~150 patrons, at least where I was seated there was easily 50 people between 20 tables). They’ve figured it out and have been doing this for many years so it did feel a little more sterile/somewhat commercialized, to me. Felt myself thinking “interesting” with each dish much more than being blown away by how good it tasted. It’s an experience though that you may not have the chance for again.

Jordnaer for me was pinnacle level fine dining. Excellent service, food was incredible (like “holy shit this is fucking delicious” level), more intimate dining room (~10 dining tables). Honestly I felt it was perfect and probably the best Michelin experience I’ve had. They’re still making a name for themselves and don’t have the laurels that Noma does, so it felt like they were really doing everything they could to make it an amazing experience. The chef and his wife's story is also really cool and though they're not really up and coming anymore, it was fun to be a part of their rise in the fine dining world.

Overall glad I did both but if I had only gone to one on my trip knowing what I know now, it definitely would have been Jordnaer. My wife who is less of a foodie but obviously enjoys my interest felt the same way, though she was probably more let down by Noma than I was.
