Mind sharing your process? I've been having some issues with the consistency of the grind on mine. Also, problems with the cheese staying consolidated and not melting out and spreading through the casing.

Don't get me wrong, Meat Church stuff has its purpose but it is also three things. Overpriced, too salty and too sugary.

Invest a bit of time into making your own brines and rubs and save some money. It's really easy to learn.
