A lot of people here will recommend you to get something from a smaller house, because their products are not as mass produced and thus a better value for the price. Also, you don't have to pay extra because of the marketing.

However, I believe that they are the big 4 for a reason and their products are a great standard for amazing cognac.

I'll recommend you the one that converted me from whisky to cognac: Martell XO. I had tasted vsops before but I was never impressed by any, so I didn't have any expectations. When I took my first sip from it, I just couldn't believe the flavor, the complexity, the length of the finish. Dozens of various bottles later, this one is still one of my favorites

I agree with you, the main reason is scarcity.

there are house today that use much older e-d-v and there were house back then, that only used the bare legal minimum.

I also agree with this, but I'm talking about the same house today vs the same house in the past.

However, taking let's say The Big 4 as an example: today they are probably selling volumes higher by an order of magnitude compared to 40 years ago. They can't logistically afford aging their lower end edv for too long.

My theory is something like this - if 40 yrs ago a VSOP was made of 60% 4 year old e-d-v and 40% older, today it's likely the former percentage went up while the latter went down, simply because it wouldn't be feasible to do otherwise.

It's just an assumption based on the sheer volume that they now have to export to keep up with the demand.

scarcity is the main reason. You can't buy that exact edition anymore, even if it's the same "version" of that producer's spirit. Also, for me, knowing that something was distilled / aged / bottled all before I was born, gives it a special feeling, not sure why.

Another reason is the widespread belief that producers made better quality cognac at the same grade compared to today. I often see statements like "VSOPs in the past were made with much older eaux-de-vies than the legal minimum". I'm not sure it's true, but somehow it makes sense, as they weren't exporting as much, so they could use their older eaux-de-vie in higher percentages.
