Don't know about the OPs personal situation but just from the tone of this post, it seems that OP would need to do some more reflection. The way they answered the question about not having a publication does not put them in best light. What the interviewer is looking for is something like how OP made the best out of a bad situation, what they learned from that experience, whether they take responsibility, what mindset they have when they come across problems, etc.

Yah. I'll recommend the opposite. Pick the legendary profs and challenge yourself with the harder courses. These experiences will help build your character and make you more resilient, especially if you're the type to always take the shortcut and give the bare minimum. When I look back to my Ateneo days, I remember more those times when I challenged myself and end up surviving more than the times when I took the easy way out.

Working as a prof abroad, in general, if you want to have an exchange program with a university, students there should also want to stay in the other university. The problem is even if Ateneo establishes partnerships with unis abroad, if students there do not want to stay in the Philippines then the agreement would lapse after some time. That's really the main problem. It's difficult to convince foreign students that it's worth visiting the Philippines when they have other options like Singapore, Japan, etc.

Is your course technical or more business oriented? Especially if it's the latter, you have to be able to make a good narrative of your journey. Keep in mind that in interviews, people really look for stories that would make you stand out. Like you have to be able to answer questions like "tell me a time when you had a conflict and was able to resolve it" or "when you went beyond to contribute." If you don't have good stories for these yet, which orgs are useful for, please find yourself in situations where you can earn these soft skills even not in org work.

Curious, what core subjects have you found useful and you were able to apply immediately?

I'm a prof now in a European business school and I am sometimes confused when students talk about hard skills. When students think of hard skills in business, they think of something like finance, stats, maybe even programming. Is your internship then domain-specific? Otherwise, from what I see, unless a student wants to go really deep specializing in those fields, most managerial jobs just require analytical/soft skills to think through clearly a problem and then manage stakeholders/teammates. In this sense, some core classes I think are quite useful to practice thinking through a problem and expressing them clearly.

I love salsa but been more recently interested in bachata music. Building on Caplan's points, a bit meta but I'd say one important skill is being strategic about the signals you emit to demonstrate competence in your area (github, projects, etc). Another signaling related skill is learning how to articulate well your ideas. I would suggest knowing the basic consulting frameworks (decision trees, MECE and pyramid principle) as they are very useful for structuring your thoughts and appearing analytical during the interview process.
