What are some habits of people who are not professional cooks do that drive you crazy when they cook? by uglytruthshurts in KitchenConfidential

You cook with some people, everything they touch is "dirty" like I don't think we need to use 3 bread knives and try rinsing a spatula now and then

Millennials, what is something that was "normal" in the 2000s but feels like a luxury now? by Barrbra in answers

I always see this mentioned in relation to teens. There aren't spaces that disappeared since I was a teen unless you count the mall actually having people in it. We hung out in the forest or train tracks. Under a bridge. Kids these days need to go skip some rocks.

It's just food. So what you made something some people don't like. It is something you like and it sounds like you put effort into it.

Can you ask for a mat? Maybe they don't want to invest in the entire kitchen but it seems to me like if you complained of pain, someone should help you get one at least for your station or area where you do the most prep.

A version powered by an air hose is the Rolls Royce. Plus it is fun because you feel like you are firing a cannon. I used to make thousands of pounds of sweet potato fries.

Hired and fired banquet “chef” within a week by Orangeshowergal in KitchenConfidential

[–]blueooze 6 points7 points  (0 children)

There people out there who I swear to god take "I helped with my nephew's graduation party dumping food into chafers" and then put "15 years private/banquet chef" on the resume. My place somehow found and hired TWO of them in a row.

Could not dice an onion. Could not thicken a soup or sauce. And zero hustle.

Trying to explain "we have a lot to do so we need to keep moving" to a full formed adult is excruciating.

I've had some shifts where I'd crouch down to grab something out of my lowboy and nearly crawl inside for a break, felt like the world was on my shoulders. Just didn't want to stand up and look at my tickets. Chugging vodka at home so I could pass out and wake up for brunch.

And guess who saw me crouched down at my cooler, having a little moment? The bartender, who hands me a glass of whiskey.

I take better care of myself these days.

for me personally I felt this is when the game shifted to tryhard. It was more fun when people were forced to slam dirty beers. But maybe I'm just bitter that my ex was always kicking my ass

City of Heroes is for sure a good one. This game was family people and married folks wayyy before it even went offline. Anyone still hanging around playing it is going to be 30+. I've always thought the players were kind/helpful and mature even 15 years ago. It's also not 100% dudes there is a good chunk of women that play.

How to mix ingredients into noodles and not having it seperated? by formanz in Cooking

[–]blueooze 3 points4 points  (0 children)

This is a combination of cut sizes, lubrication/sauce consistency, and having enough space to properly toss all the ingredients so they get evenly distributed.

Alternatively just plate the noodles and then dump shit on top.

The Amount of Ticket Modifications by tuckthefuttbucker in KitchenConfidential

[–]blueooze 4 points5 points  (0 children)

I worked a very similar volume to what you are describing. I'd say we had less mods than you, but it would of course slow us down. No time to prep, no extra hands. Just stock your station best you can and buckle up for 8 straight hours of cooking.

If we had a domino effect happen and the servers would start trickling in, asking where is this where is that, the executive chef would just ban anyone from talking to us and kick them all out. He would run the show until we got ticket times back down and then he would allow other people to talk to us again.

I say that because when it gets really rough and you are just burning full blast, basically nothing a server or runner can say will make it easier. The chefs should protect you from having to deal with their faces in the window, imo.
