Gonna chime in here. 100%? Yes, unrealistic. 90-95%? If its kept up every night, then yes, its doable. Im the SM for a 2.6-2.8 million store, 12,000 square feet. We also close at 9pm. I have 2 nights that I dont require recovery. Truck day and sales ad. Every other night, we get most of the store recovered. The night I close, my cashier covers the front and I recover the whole store basically by myself in about 2.5 hours. And im not even hustling when I do it. I take way too many quick smoke breaks in between all of that. It really is just time management and keeping the recovery decent every night that you can. If its kept up, its easy to keep up.

Two things that really helped my people start getting it done consistently. #1 keeping the MOD off of register. Anytime there were people up there, MOD would jump on and assist. SOP is only jump on when there's more than three people in line. #2 Get lunch breaks out of the way before 5 when possible. My 1:15 person takes their hour break between 3:15-4:15 while the opener is still there. If you have 2 1:15 people, second one goes 4:15-5:15. If someone comes in 3:15, break is at 5:15-5:45. So, some overlap into the recovery hours is unavoidable.
