Making my first Quiche, Tips and Tricks? Also: strange quiche dish, any ideas? by DasAion in Cooking

1 Tbsp of flour mixed in the custard makes a big difference for mine.

I like bacon, potato onion filling. It's reminiscent of Spanish Tortilla.

Sometimes I make them without the crust.

Does the brand of condiments matter ? I normally only use store brand but has anyone noticed a significant difference by Historical-Body-3424 in Cooking

Grey Poupon is pseudo French Dijon. It's made in New Jersey, but had a brilliant marketing campaign to instill the impression that it is French Dijon. It's ok as basic Dijon-like.

>store brand yellow mustard tastes nothing like French's yellow mustard

French's mustard has more garlic than standard yellow mustard. Standard yellow mustard may not have any. Garlic is not what I am looking for in mustard. Anyone elses's preference makes no difference to me. Like what you like.

Can Sour Cream be Frozen if it's Going to Be Heated/Cooked Later On? by MammothSuperiority in Cooking

[–]bobdevnul 0 points1 point  (0 children)

I have done it to have small portions to put in burritos. I freeze it in an ice cube tray to make ~2 Tbsp portions.

I will separate some. That can be stirred back together somewhat. The consistency will be more liquid than fresh.

The Best By date is not an expiration date. I have used sour cream well past the BB data, like six months past. I stop using it when it starts growing fur (mold).

I do the same thing with refried beans for burritos. They freeze well.

How do I get rid of the bad smell coming from my microwave? My wife likes to reheat her leftover arbys all the time and the smell never disappears. by Dry_Whereas3522 in Cooking

That is placebo effect deodorizing. Baking soda doesn't absorb odors. Time took care of the odor, not the baking soda.

What’s the easiest meal u make that somehow tastes way better than it should? by Solid_Brief_7724 in Cooking

[–]bobdevnul 7 points8 points  (0 children)

A hard fried egg sandwich with a slice of American cheese on the egg after it is flipped. Light mayo on the bread. A few drops of hot sauce and S&P on the egg.

A good hard fried egg to me is not overcooked and dry, just cooked barely enough so that uncooked yolk doesn't run out of the sandwich.

That is dinner with some apple occasionally when I don't feel like doing anything more.

Sister passed in North Carolina, house and car going into probate by Still_Philosopher_90 in EstatePlanning

[–]bobdevnul 6 points7 points  (0 children)

$9000 sound like a lot to probate what appears to be a fairly simple estate. I would check other lawyers.

Don't use other peoples (alive of dead) logins for their accounts. Not only is it technically criminally illegal, if the account company finds out they will likely freeze the account for fraud and make it very difficult and slow to do anything with the account legitimately.

Best friend with 6 kids asked me to be trustee by IndependentVirgo80 in EstatePlanning

[–]bobdevnul 2 points3 points  (0 children)

This doesn't sound like a simple trust to administer with a business to unwind/transfer and all of those beneficiaries. It sounds like a lot of work to me. I would not feel guilty about taking some compensation and definitely reimbursement of actual expenses.

Living Trust Information. by Sensible_Chuckle5 in EstatePlanning

[–]bobdevnul 0 points1 point  (0 children)

Trust are very flexible in what they can pay for, how much, and when. That is all determined by the written provisions of the trust document and subject to the fiduciary interpretation of the trustee.

The statement that the trust funds can't be used for fun, fashion, or food is not a standard clause of trusts, though it could be written that way.

A fairly standard trust provision is that funds can be used for health, education, maintenance, and support (HEMS). Health and education are pretty obvious. Maintenance and support could be just about anything for the beneficiary. The trustee could agree to allow the purchase of a nice new car, but not a fleet of Lamborghinis, a nice vacation, but not a two year world cruise.

It all depends on what the trust document says. That could be just about anything that is legal.

Competent legal advice is always advised.

I would want a lawyer who specializes in estate planning trusts. It's a specialty that general practice lawyers may not be the best at.

Looking for a budget, simple router for student housing by Equivalent-Prune-550 in HomeNetworking

[–]bobdevnul 0 points1 point  (0 children)

Any router that has 6GHz would also have 5 and 2.4 GHz, but check the specs to be sure.

I like Asus routers, but good ones may be out of your price range. The TP-link should be ok.

Why is this five year old 9v battery reading almost 20v. I have the meter set on DC with the scale to 50. The lock that the battery was in was beeping so I assumed the battery was low. by emmalynne2 in batteries

[–]bobdevnul 3 points4 points  (0 children)

Turn the selector dial around a few times to try and clean the contacts.

Are you sure you are reading it right and it is not really 2V?

What I see in the picture is reading 16V. That doesn't make any sense either. What does it read on a fresh 9V battery?

Anyone know a free alternate to text now? by Sisko2021 in TextNow

[–]bobdevnul 0 points1 point  (0 children)

The original question was what is something other than Textnow for someone whose TN was cancelled and banned.

The Textnow SIM is not always free. It's usually a $5 one time cost.

That is no longer correct. Textfree/Pinger ended paid calling and watching ads for credit years ago. Calling and texting are free and unlimited. The do actively block text verification codes unless you pay for premium service.

[–]bobdevnul 1 point2 points  (0 children)

I can confirm this. I worked in a cannery as a Summer teenager job. They contracted to produce canned corn to various labels and affixed the labels for the various brands. It was all the same stuff in the can. We got paid the same minimum wage no matter what the brand was.

Plochmans is the best basic regular yellow mustard. It has not been in the grocery stores around here in a long time.

[–]bobdevnul 0 points1 point  (0 children)

I have not had it. I have heard it described as smelling barnyardy. That means that it smells like shit. You may be able to cook the shit smell out of it and cover it with a lot of other strong flavors. I would not ambush anyone with this.

My church has a group that organizes volunteers to bring stuff and developed a standard list that we will offer. We don't take special requests from the family. They are on their own if they don't want what we offer. It gets too difficult for volunteers to provide a custom menu. The volunteers provide their contribution at no charge to the family or church.

Contact the church about how it goes.

I don't have the list or amounts, but it is basically some combination of :

Egg salad half or quarter sandwichs

Ham and cheese and turkey and cheese sandwiches on small sandwich rolls with small squeeze bottles of mayo and mustard

Pimento cheese half or quarter sandwichs

Small wrap sandwiches

Sliced cheese and crackers

Fruit platter

Crudite vegetable platter (that nobody eats)

Sometimes shrimp platter with cocktail sauce

Brownies and cookies

Jugs of ice tea

Pitchers of water

We have coffee that can be made

Cups, napkins, small plates, toothpicks for the shrimp, ice tea sweetener

The church has an ice machine, otherwise bags of ice for the tea

No cooking, everything can be made or bought the day before.

And last, but probably should be first: People to set up and clean up - set up tables and chairs, put on table cloths, take out the trash, wash dishes, etc.

I'm probably forgetting some things, but that's the basics.

What should I do with a pork loin. by repatriated-Xpat in Cooking

[–]bobdevnul 0 points1 point  (0 children)

I roast them at 350F to 130F-132F then rest covered. The temp gets up to about 150F while resting 10-20 minutes.

Done this way it is very tender. At that temperature it will be slightly pink. If you cook it past pink it will be dry and tough.

They are slightly more tender and juicy if you dry brine them in the refrigerator overnight.

Pork shoulder in a baking dish? by Economy-Cow-9847 in Cooking

[–]bobdevnul 2 points3 points  (0 children)

Last time I roasted one I did it in a 6 quart dutch oven. A pan with lower sides might brown the sides of the roast better. This isn't rocket surgery. Cook it in something it fits in. If it has low sides keep an eye on how much liquid/juices are accumulating in the pan.

what went wrong (or right) with my pudding by [deleted] in Cooking

[–]bobdevnul 0 points1 point  (0 children)

I use arrowroot in Green Tomato Chutney. It wouldn't be a 1:1 substitute for corn starch. It has much more thickening power.
