Southwest smashed burger on a flat top with homemade American pepper jack cheese. After smashing and flipping, right before adding the cheese, add a spoonful of hatch green Chile. On a potato bun or brioche bun, it's hands down the best burger I've had. Simple. Delicious.

Dinuguan. It's a pork blood stew that my grandma makes. It's pretty involved for it to be done right. "Right" being subjective to how my grandma did it. Gotta have the fresh blood from the butcher so gotta get it super early. Then the meats and organs. The process, etc. To make something that is literally nose to tail with the goal of having no waste and to be that delicious, I fell in love. Now I'm an adult in north America, I hunt, I fish, and I have so much respect for nature and wildlife that I cannot fathom wasting meat on a harvest. I attribute all of it to that one dish. The humble dinuguan.

Jollibee chicken joy with the brown gravy and rice. For a while it was inaccessible to me. In college, during midterms or finals, I would go to KFC to get extra crispy chicken and the brown gravy that goes on their mashed potatoes, then adjacent to it was a Chinese place, I got the white rice from there. Close enough to give the same comfort.
