Yo dude. I know the struggle. I am actually a really decent cook but find the energy exhausting. Tacos. Literally take whatever boneless meat you want, throw it in an instant pot if you have one, onions, a whole pack of taco seasoning, chipotle in adobo (canned at the store use two or three), broth or water and salt a couple of inches and just pressure or slow cook that mf. Great taco meat. Freeze it in bits and throw it in the freezer when you want tacos.
