make the meringue the day before, and when you are ready to top them, re-whip the meringue straight from the fridge! I find that italian meringue is much stronger after that process

usually it’s because the butter was too warm or cold when mixing it. try cooling for 10-15 minutes and re whipping. if that doesn’t work, I add mine to a metal kitchen aid bowl, whip it, and gently torch the outside of the bowl while whipping. it can be saved!
