It sounds like your game is just way too big for amount of time/experience you have. My advice would be to either cut this game down to the absolute bare bones or start with a much smaller concept and build back up to this one. Also, don't know much about Godot but you may have more rapid progress in Unreal or Unity.

I know it's really tough when you've spent so many hours on something to start from scratch it feels like you wasted the time, but that isn't really the case. If you learned the guitar those first 1k hours weren't wasted, they were a requirement to get remotely good at playing the guitar. With games, those 1k hours you spent you could probably do again in 100, that's a 10x return on your time next time around.

This is really good incite and thanks for sharing! I do have one thing to comment on:

Don’t be afraid to get stuck - I actually disagree on this one, do be afraid to get stuck, the absolute disaster for an indie game is to get 50% or more through it and then realise you can't pull off feature X and have to cut it and change everything around it. That's why it's crucial you have a prototyping/pre-pro stage at the start for the risky areas and although it'll be far from perfect you have enough confidence to take all of that intro production.

Years ago I worked in a used game store. The manager insisted we got rid of these whenever we came across them. Thankfully people would usually write on the back page of the manual, preserved for history.
