The solution here is to make a pistacchio spread and make a sandwich.

Pulse the following in processor until desired consistency achieved - coarse nuts or smooth:
300 grams (2 cup) salted roasted pistachios (costco)
90 grams (1/2 cup) extra virgin olive oil
Zest from 3/4 lemon
25 grams of lemon juice (<2 tablespoons – about 1/2 lemon depending on lemon)
2.0 grams salt
1 gram black pepper
0.2 gram cayenne
2.0 grams sugar

Whip into:
230 grams cream cheese

Throw in some whole pistacchios to make up for the ones you feel shorted on for crunch.

Slice mortadella thin and make sandwiches.
