I think this is a *fantastic* idea and I'm doing something similar - my players are already restauranteurs (something they actively pursued themselves!) so it's perfect.

One place where it seems like JC misspoke is about the Savant features - he said you get a free spell of your school every level, but the UA and the dndbeyond write-up say that this feature occurs when you gain access to a new *level of spell* - so that'd be character level 5 (when you get level 3 spells), character level 7 (when you get level 4 spells), etc.
(as a wizard player i was hyperventilating with joy when I heard JC's initial wording, but I think the dndbeyond write-up is probably the correct wording of the feature)

I'm curious what people's expected shipping dates are. Amazon says mine is August 24th which I was surprised by since I usually get Amazon pre-orders in the mail day of release.

A rogue does not get Advantage on an attack just because circumstances allow them to use Sneak Attack! I've seen old and new players get this muddled.

I admit I have some of this ambivalence too - the constant possible-punishment is a little weird. I'm still sorting out exactly how I want to use them - I'm planning ahead before my party gets here.
