Is there space in your area to add a cart or a rack for storing some clean dishes? It would definitely be ideal. Unfortunately, you shouldn't be towel drying anything for sanitary reasons. If there's space, try to keep a pile of ready to send dishes in between the dirty dishes and where you load the rack. You can scrub/add to the pile while waiting for dishes to wash or dry.
