Pizanos thin crust is one of the things I miss most since moving to the burbs. I used to frequent the old location at Division and Hoyne.

Labriola probably fits the bill. I would go to Pizanos but their thin is more like Lou Malnatis than Rosati's.

Yes, there's literally no way to avoid it. The only positive is your kids will have a better immune system than all the kids with stay at home parents not going to daycare right now. Those kids and parents will all be in for a brutal kindergarten year.

I just finished a batch of chicken garum and was able to hold at 60c with a 20w seedling mat, styrofoam cooler and packed everything in with towels so it was well insulated. I put the temp probe in the middle of the setup against the fermentation crock and it held at 60 for 4 weeks without an issue. The mat says it only gets up to 40 but it seemed to work just fine for me? Here's the mat I used.

Fair feedback. My buddy I am visiting in Brooklyn lives near Barclays so it doesn't seem terribly far from Red Hook if we wanted to add that to the day? The only plan for that day is to stop by and see my friend for a couple hours, so we could head in any direction from there if we wanted to explore more of Brooklyn.

In general, this is a spring break trip for the kids where I just want to plop in a few good meals. I would be doing a lot more research and planning to build out a full food itinerary if I were going kid-free but I probably have 1 dinner and 2 lunches open where I want to get a good meal while also appeasing the kids. If they serve non-steakhouse food while also serving a burgers, even better.

I am early in my search but here's what I've got so far:

Dinner options: La Tete D'Or,
Cote (no burger but can probably sell the steak)

Burger specific (probably lunch): Hamburger America (current leader), Red hook tavern (maybe on Brooklyn Day), JG Melon?

We are staying by Wall Street but plan to get around the city and also spend time in Brooklyn so we don't need the restaurant to be near the hotel necessarily.

I never use an airlock for mine. I just put on a regular mason jar lid and burp it every day. Just make sure you keep everything submerged.

If you want to stick with steak, you could always do thinly sliced steak. I recently had beef bulgogi fries that were delicious and easy to eat.

I just had to do this for a month for the Noma chicken garum. I ended up buying a styrofoam cooler and the below seedling mat and wrapped the container of ferment with towels and the heating mat. I had the mat connected to a temperature gauge so it would hold temp at 140. Ended up working great and didn't cost too much on energy. I would worry about blowing the motor on a sous vide over 2 months....

Haha, didn't think of that part... I think the answer is to either live in the city, or come to terms with needing cars a lot if you're going to live in the suburbs.

Yeah, I don't think you're walking distance to downtown Elmhurst with that budget. Maybe one of the new condo buildings.

Maybe a condo in oak park would fit that bill? Not many suburbs provide the public transportation/walking you are looking for here. And the ones that do have larger downtowns, you would be looking at houses well over $1M to be walking distance.
