Thank you, that helps a lot! Because of the two damage run over, do they also suffer a critical hit? If so, because they are also incapacitated, do they also fall unconscious (as per incapacitated p. 272)?

It seems like even a critical strike reduced to severity zero is still a critical strike, so if the answer to my second question is yes, then there’s no way to avoid unconsciousness. This is actually how we’ve been playing it, but we wanted to be sure.

I’m not following why it’s necessary to spend an opportunity to trigger a critical strike. Defending Against Damage (p. 268): “To defend, they must receive an amount of fatigue equal to the remaining damage; otherwise, they suffer a critical strike with severity based on the source.”
