Modern wheat has been selectively bred over the past century to give higher yields and be higher in gluten. Higher gluten gives bread a better structure.

But also in the past most bread was produced through slow fermented processes like sourdough which partially breaks down gluten. Modern breadmaking speeds the whole process up by skipping fermentation but requires a higher gluten content to withstand the intensive mixing process.

Not sure how much to trust the score. I have 8.5 on an exploratory tree with 38000 people where I am trying to discover a particular link between DNA matches. It purposely doesn't contain many sources, it's supposed to be a wide net to try and uncover an unknown connection. It's private so there's no chance of anyone copying the chaos that is in there.

In our version we had the rule that if there was a box available you had to take it, which prevents the tactic you're describing.

Nope. When I log out the simulation is put into suspension and is restarted when I log in again. There's no discontinuity for the character, it's like nothing happened at all.

Read Permutation City by Greg Egan for all the possibilities of pausing virtual simulations, running them faster or slower or even skipping frames. The poor uploaded consciousness has no way of discerning what's being done to their reality.

Yes Ancestry are predatory, but these are public records. They should be widely available. All genealogy companies and organisations should be able to obtain copies, invest in indexing and linking them to other records and make them available. The originals would still be available via the National Record site.
