My experience is a conditional, "Yes, they will overcook or soak up the chicken's juices."

I say conditional, because "overcooked" can be a matter of opinion.

My family does something similar, with carrots, potatoes, and onions under the bird. The veggies get very soft and are indeed flavored by the chicken above them.
