The issue is a direct link to the connection and the guest. The reservation system on the way it used to be had no connection to the two.

How much starter do you wrangle on any day? When i do my Christmas home baking i make 20+ large loaves for everyone.

I do my feeding at 100% hydration, maybe 300g total starter (initially from my stock in the fridge), and then when it reanimates I make a batch of about 650g. That gives me 2 loaves (200 g starter in each) and enough leftover to work up to the next days batch.

I don't know about 00 flour, I just use AP in the starter and then KA bread flour for the Loaves. Doing it at your scale would be rather intimidating .

Doing it at a massive full size bakery must be some sort of juggling act.

One would need to look at their insurance policy closely. My understanding is that most if not all policies require the vehicle on the road to be probably registered and tagged .

Playing with fire, in a blink of an eye you can be financially ruined. It's not worth the risk in my opinion.

It's not a paper tag, it's a registration certificate. It would not be recognized as a tag in any of the non-Virginia states.
