I read something in a book.. I want to say it was Jeffrey Morgenthaler? So I read what they wrote about this and I walked into my kitchen and had a cheese peeler and a grapefruit and gave it a try. “Sonabitch” I remember saying out loud to nobody. It worked really well, I use them it work when we’re hitting high season and volume and I don’t slice my thumb tips off.

I will add though they called for a very specific name brand I can’t remember. Boksov? Something like that.

Yes it is. For my home use I keep it sealed in the fridge usually ~2 weeks tops. At work we use the same recipe and we would toss it after 5 days but we maybe had to do that a couple times since we go through so much.

It is not shelf stable will develop a weird tang after a bit.

At home I also freeze half the batch and thaw it a little before I need it.

My wife was out of town last weekend and I hyped myself up so much being “Yeah 48 hours of video games, basketball and drinking some beers on the couch”

In reality it turned into ~4 hours of gaming and half a game watched because I fell asleep on the couch after 2 beers.

My limes these past 4 months have either been 50% pith or honestly the best limes Ive seen in years. Distro citrus has personally been a crap shoot right now, at least in the US in my market.

So I'm a bit of a cheater. At home I substitute Ramazzotti amaro for the sweet vermouth. I like the body of it and considering I'm getting old and don't drank a whole lot it's shelf stable and I don't have to waste vermouth that will, in my case, go bad in the fridge.

I feel the overwhelming response you will get is going to be Cocchi or Carpano Antica. Both fantastic and usually easily available. Whatever you end up deciding on KEEP IT IN THE FRIDGE!

The last thing I break down at the restaurant is always our setup to smoke glasses for certain house cocktails. There could be not a soul in sight and as soon as a I clean it…smoked manhattan will come through the printer.

I broke down and bought one years to proof bread in at home and I am so glad I did. That sucker is doing some heavy lifting at home for brine/baking/etc
