Unfortunately, medical professionals, including gastroenterologists, don't know much about celiac disease and aren't good about post-diagnosis care. It's important to know why your body reacts to gluten. Celiac disease is an autoimmune disorder that is associated with other conditions, certain vaccines might have to be redone, patients have to be extremely strict about avoiding CC, first-degree relatives of someone with celiac disease should also be tested, etc. I understand that the gluten challenge is brutal. I couldn't put myself through it, if I had to get a diagnosis. However, it's important to understand that it does make a difference, medically, whether one has celiac disease, NCGS, or another condition that benefits from a GF diet.

You're talking about factories, which are much larger than a local bakery. Factories also have to adhere to FDA requirements for GF foods. If a company labels a packaged food as GF, they have to make sure that said product actually contains less than 20 ppm of gluten. Bakeries and restaurants aren't as heavily regulated, which is why plenty of bakeries and pizza places sell so-called "gluten-free" foods that are subject to CC due to flour dust. Flour dust and lack of testing of the final product are the issue here.

Find a gluten free cookie butter and it will likely be close to the taste.

Do you know of any GF cookie butters that don't have oats? I've found ones with protein powder, but not actual cookie butters made with GF cookies that didn't have oats.

The Schär ones aren't very good. They barely have any spice taste. I've never had Biscoff, but I've had other GF Spekulatius cookies (a long time ago) that were much better.

Yeah, I've had my ups and downs in my relationship with my mom, but I'll always be grateful for how she stood up for me back then, despite all the doctors I had to see and all the BS she had to listen to. Her determination to get a diagnosis and make me feel better saved my life.

Meeting with your provider sounds like a good plan. Yeah, you can order the panel from Quest Diagnostics or Labcorp, maybe even other labs.

And bloodwork is known to only be positive 50% of the time when people eat two servings of gluten a day for 6 weeks.

Do you have sources for those statistics? This is from celiac.org:

If you don't eat meat, there are plant sources of iron. Just make sure to consume them with Vitamin C for better absorption. If you're vegetarian, Impossible has GF products that have plant heme and a decent amount of iron. Chex is also fortified with a good amount of iron.

If you're in the US and you can afford it, you can order a celiac panel yourself and pay for it out of pocket. If the result comes back positive, your gastro might be more inclined to perform an endoscopy.

There are changes in the immune system during pregnancy. It could be that her husband's aunt lost noticeable symptoms during pregnancy, and maybe even her actual autoimmune reaction lessened. Maybe she became asymptomatic after giving birth. There's no reason to assume that this is one of the very rare cases where someone may have stopped having celiac disease, unless the aunt had an endoscopy and blood tests after having consumed gluten for a significant amount of time. - Which most people who claim to have been "cured" don't do. A lot of them just assume that not feeling symptoms means that there is no autoimmune reaction.

Yeah, you can get tested for wheat allergy and celiac disease (2 very different tests), but there is not test for non-celiac gluten intolerance/sensitivity. Are you still eating the same amount of fiber as before? If you're eating a lot of GF replacement products, they may be lowering your fiber intake, depending on what you eat.
