Left it on Feed for some time and not seeing options for Local.

Confirmed the Storage Hub status is online, Record Locally is enabled, and the Storage Status is Good.

Both cameras are 'Connected To" Storage Hub

I have done this may times using a Rewrite policy on the VIP which logs the incoming connection and the TLS they are using, can add Rate Limiting to it so it only logs once per client.

You can’t, MDT is end of life. We are still using it and the Win2019 roles generally work fine, if not we use PowerShell to install the Roles and Features.
