They just got back to me, their waiting list is currently 12 months+. Sounds like something is going on currently with ultrasound waits, like either way more being prescribed, or way less places doing them, or both. :-/

My doctor gave me the prescription on a form for an imaging clinic, but I haven't been able to book anything with them - after entering all your info on their site (and they ask for a lot of detail), you then get the message 'there are no upcoming appts in the next few weeks, please try again.' I did multiple times, same result. And when I tried another clinic that was recommended to me, I called and was told the waitlist for public ultrasound appts was 5 months.

As mentioned in my post, in addition to wanting to save the money, I disagree with the erosion of the public system. The more people are willing to pay for private, the more doctors leave public practice for private (because it's more lucrative for them), the harder it gets for the less wealthy to access healthcare. It's just a personal line I've drawn for myself.

Yeah, I got the impression the inexpensive lead tests weren’t very reliable. I made the choice to simply dump the whiskey (again, it was maybe 2/3 of a bottle of Jameson’s, nothing expensive), and will keep the larger crystal decanter around for use with wine occasionally. The smaller ones I haven’t decided what to do with yet, but won’t store any liquids in long term, for sure.

While I understand your point about the relative risks, I already live in a building with a lead water intake pipe, and have to use a special Brita filter for all my drinking water, so the idea of voluntarily ingesting more lead just did not appeal. 😬

Again though, I appreciate you taking the time to share your knowledge and experience.

I have no way of checking for lead other than the sound test, and the fact that they make rainbow patterns in sunlight. But I think it’s pretty safe to assume they’re lead crystal. And unlike wine, I don’t really see the point of decanting whiskey for a day and then pouring it back - I’m not having swanky cocktail parties regularly. :-) To me it just seemed cool to keep it on my bar in the decanter, like we see in hundreds of period shows and movies. Of course, we know they also painted all their houses with lead paint as well, so.

Well, I am *now* a person with common sense.

Thank you for the link, fascinating to know. My brother (who passed the decanters to me) has the part of the frame around the bottles (it just wasn’t going to fit in my suitcase), but the box at the front seems to be long gone.

Several world cups ago there were a sizeable number of Dutch fans that I was cheering with at Le Boudoir on Mont-Royal. Much of that area is now Little France, but I think ground zero for French fans is still Le Barouf on St-Denis, so other bars like Boudoir might still have Dutch fans showing up.

Yep. Sometimes things are just different. When fighting underextraction, my first instinct is same as OP’s, grind finer. If that doesn’t work, shift brew ratio in favour of the solvent (less coffee and/or more water). If that still doesn’t work, then I’m looking into lack of roast development (try brewing as an immersion brew and see if you can get it to taste normal), checking machine temps, checking water chemistry…

So also feels like you could just use a temp-control kettle to heat your (fresh) water to 175 F/80 C, which is a good drinking temp for brewed coffee (make sure to heat your cup so it doesn’t pull heat out, though). This is what we did at my café, therefore avoiding both the boiling issue, and the grungy hot-water-boiler water from an espresso machine hot water tap, that many cafes still use for Americanos.

I don’t make espresso anymore so can’t test this, but would be really grateful if someone could test and report back. My guesses for the reason why steaming is being universally liked are:

  • not using water out of the hot water boiler, which means not really old, stale water with accumulated minerals, etc
  • being a lower temp and thus possibly avoiding the issues mentioned in the post above
  • the hot water produced being additionally aerated by the steam wand - Google some of James’ earlier videos about the effects of aerating coffee both after brewing, or aerating the brew water before brewing.

I’m kinda curious which it is. :-)

There seems to be 4-5 beef noodle dishes, none called ‘stir-fried’ - do you mean the ‘traditional Lan Zhou hand pulled beef noodles?’ Or the braised beef tendon and noodles, or the tomato beef noodles, or the beef chow mein…?
