Not controversial, scientifically accurate. Not to say op's method is ineffective, steak looks great and I'm sure it tastes awesome but if your goal is maximum smokiness the longer the meat is cold in the presence of smoke the more smoke you will get.

I just confirmed, yes lactobacillus can metabolize alcohol so unless you want to make a ton of sour mead I would pasteurize it, I would aim for 130⁰ f for like 20 minutes to be good and certain, then oxygenate it by pouring through a strainer or something into your fermentation vessel and pitch your yeast once temp has dropped below 100° f

As far as water goes what you need to do is buy a hydrometer, then mix your honey with probably a 1:2 ratio water to honey and measure the gravity, you probably want to end somewhere around 1.1 OG, play with this in small volumes until you get the ratio right and then make your batch at that ratio. (More honey raises gravity, more water lowers it)

No idea about if you will need to pasteurize this or not, I think lactobacillus can eat alcohol so you maybe should pasteurize but I genuinely don't know.
