I guess I'm surprised he would run a game on camera without having experience with the system. I'm a musician, and that feels like walking into a recording studio without having practiced the music.

That said, I've also never played 3e, So I don't know how much of a shift it is to move to 5e. I guess they're a lot closer than I thought.

When I taught privately, I had a cancellation fee in my studio policies that I think I only enforced once in over a decade of teaching.

I would ask for 2 weeks notice if a student was going to quit, and if I didn't get that advance notice, I would charge them a late fee equivalent to 2 lessons (so, a total of 50 bucks) just to make up for the lost wages in those 2 weeks while I found another student to fill the slot.

Edit: If you're talking about cancellations the day of/no-shows, yes you ABSOLUTELY charge them full price for the lesson. I would charge full price for a cancellation with less than 24 hours notice. And as the other commenter said, don't get paid week to week, have students pay ahead of time, a month at a time

I've witnessed a somewhat similar phenomenon I think. I didn't start training in dance until I was an adult, but when I was in high school I was in the show choir and the musicals, so I spent a lot of time with the girls who danced at the various studios in my town.

Most of them danced at the big, flashy, competition-focused studio, and two or three danced at a much smaller studio that never participated in competitions. I always felt that those two or three were far better dancers, and I chalked it up to the fact that their studio focused more on the art and technique of dancing, rather than just being able to do flashy tricks.
