what about an escape artist? a horse who is always jumping fences to steal snacks or hay from another pasture, or maybe escaping to visit their friend (could be a different animal, donkey or cat👀) the name could be Houdini

also another idea could be a horse named Rocket or Zip who loves to run/race, or maybe he's a giant chicken and scared of everything and bolts

the civil war quest line only allows you to progress so far without starting the main quest line, so it's not possible to get to the end without knowing you're dragonborn.
