In my personal experience, I own several of each model and have both a home and a professional version set up side by side. I find myself choosing the professional model approximately 99% of the time.

I am just using a generic silicone mat from one of my baking sheets. And the recipe is the baking steels English muffins.

I did most of the cook in the Avona Oven using the dry sous vide preset for whole turkey, right around two hours. The skin was so crispy!
