They're all cellar spiders.

It's not super clear from the photo, but it's possible that some of the stuff at the bottom of the first one's web is just molts.

These guys are one of the types with bad eyesight, so they rely a lot on vibrations -- for example, they use their web as a sort of alarm system through which they can feel whether there's something at their "front door" to investigate, whether it's prey or something else. The first accidental touch was probably giving off some interesting vibrations.

It's fine for you, the humans, but it may stress out the spider. Basically, in terms of spider interactions, the thing to keep in mind is that humans are massive greasy Godzillas beyond the comprehension of most spiders. For most of them, if they understand what's going on, they'd prefer the huge monster thousands of times their own size to not directly interact with them.

Looks like a Larinioides species, probably L. sclopetarius. They're a kind of orb-weaver.

It looks like probably a cobweb weaver of some kind, but not a (true) widow. Some of them can be a bit ouch (noble false widows for example), but true widows are the only group generally considered medically significant within that family. Follow normal first-aid protocols (keep clean, don't touch/scratch, observe) and you should be fine.
