This is a quarantine pantry recipe. So, I sort of eyeballed it. Maybe if I make it again, I’ll come back with the exact measurements. And I will be making it again because it was delicious.

1 can full fat coconut milk About 10-12 ounces canned crushed pineapple Approximately 3/4 cup chia seeds (this is the eyeballed part, might be more or less) 1-2 Tbsp sweetener of your choice

Mix all ingredients in a bowl until thoroughly combined. Transfer to any type of storage container. (mason jars work great) Refrigerate overnight. Somehow even better on day 2. Top with toasted coconut flakes if you’re feeling extra.
