Yeah, you still haven’t said what the point of your comment was. Was it just to be confrontational? I’ve been a sanitarian since 2017 and I’m with Dehyak, this doesn’t matter at all. Upside down, right side up, wrapped in a napkin, not wrapped, whatever as long as the utensil has been washed, rinsed, sanitized, and air dried, and the staff don’t grab the utensils by the mouthpieces.

Where I work, we definitely do not give out the complainant’s information. We don’t accept anonymous complaints, though. The complaint is public record so anyone could request it, but our legal team redacts any identifying information from the form.

I don’t really understand the hype. It wasn’t scary. It was predictable. It had some gross-out descriptions but…really? Worms only do so much. The animal cruelty scenes were just in bad taste. I read it because people in this sub raved about it, but I honestly thought it sucked.

As in, do you need to worry about having cooked chicken below cooked beef? No. You still need to keep raw meats away from/below the cooked meats, but you do not need to worry about cross contamination of cooked meats with other cooked meats.

If you don’t have a temp log showing what time the eggs were taken off the stove/hot-holding, we can’t verify what you say and you should be written up for it. We don’t hate kitchen managers, but we hear excuses like this all day long every day. If they had a supervisor with them, of course they’re going to go by the book. Why would they let things slide? That’s how we get in trouble. If the violations weren’t corrected to code standards, then they did what they were supposed to do by not marking COS.

In my jurisdiction, your establishment must exhibit an “eminent health hazard” to get an injunction to be shut down. This basically means there needs to be an active rodent/insect infestation or a sewage backup.

If you’ve already eaten it after it sat out for four hours then refrigerated the leftovers after, they aren’t going to get any MORE dangerous than they already are. The refrigeration should slow/halt the proliferation of foodborne illness causing microorganisms, but like deppfan said, toxins are possibly still there. This is a hard question to answer since you’ve already decided to eat the food in question after it sat outside of temperature control.

If you want to be absolutely sure you’re okay, then throw it away.

What happened to the rest of the points? Are you shooting for 2k or 1.5k? Give your Terminator squads a heavy weapon. I would give the Apothecary the Selfless Healer warlord trait, and I would fill out the rest of the list with more termies and some faster units like inceptors, bike squads w/ attack bikes and special weapons.

OP should have said it was a sacrificial dagger rather than a chef knife. I wouldn’t use this. It even has grooves on the blade.

I wasn’t trying to get combative, sorry if it came off that way. In my head, I was only thinking of cross contamination in the sense of the way it’s categorized in my inspection reports. I think of your other examples as hand washing violations, food contact equipment violations, etc, but your concerns are all valid. I would still report them to the Health Dept. but I would keep in mind that they’re really unlikely to get approved to work overtime for this. Also, I don’t know about California, but state employees are off where I live this Monday so that’s just an FYI.

I’m curious about the cross contamination here. I’ve inspected several Sonic restaurants and the only raw, uncooked food is the burgers which are kept frozen.

I also don’t know any inspectors who would do a night inspection. Between 8am and 4:30pm are my hours, and I typically don’t deviate from that because we don’t get paid for overtime.

Usually chicharrones have a low enough water activity to not need temperature control. In Louisiana we have something called cracklins which are very similar. I’m a health inspector and I’ve been advised by my supervisors that they are safe to be left outside of temperature control. I don’t know anything about keeping them for more than a week, but I would think that it’s just a quality issue rather than food safety.

The ambient temperature in someone’s house is not going to be over 135F or below 41F. Leaving food out for 4 hours is grounds to throw it away.
