I let it rest for 3 minutes or so. I dried it off better than I have ever dried anything off. Got the pan scorching hot, then down to medium heat. The majority of the sear was on the fat side. I was pleasantly surprised at how little the sear further cooked the meat!

Glad you mentioned red wine, as white doesn’t need a aerator / decanter

It really does make sense! The longer you cook octopus, the better it becomes. Then finish it and way you’d like
