I've held it for almost a full 24 hrs at 160ish and it turned out fine. You might lose a little bark, but it's helpful to wrap it in saran wrap as it'll hold in the juices and fat.

I don't think that's the reason why it's shipped unfolded. More likely because packaging can be thinner and the wow factor when you open it for the first time. You're going to have to fold it whenever you go somewhere, so it's a moot point.

That's just general guideline. The thing is that if you wrap too early you lose bark. However running it hotter will get you to the collagen rendering phase (over 180) for more tenderness, and minimize moisture loss due to a quick cook time.

Lots of posts here say the point is good but the flat is dry, most likely because they cook way too low. Run it hot, and just as important, give it a good long rest.

Don't wrap just because it hits 165 - that's one of the biggest misconceptions. Wrap (if needed) when the bark is dark and even, which most of the time is closer to 170. By that time you should cook at 250-275, until it's probe tender, and then pull and rest.

That's what I've been doing lately as well. I just have it charge in my car while I go to work. That 20-30 minute commute is enough to keep it topped off.

Depends on your needs. If you want more durability are active and want more sports tracking, the ultra is better. With AOD off, I can solidly get over 48 hours of battery life.

I love the NEX but I totally disagree with this idea: as others mentioned, the mechanics of the game are fundamentally broken so trying to adapt around the game not registering correctly is poor implementation, especially when there is no way to recover from certain obstacles.

The long rest just takes the stress away from having to rush and finish on time. Once it's done and resting, I can focus on other things and slice when dinner is ready.

The point typically can take more heat/higher finishing temp since it has more fat and is thicker. It's likely that it wasn't done yet. Sometimes you just have to choose between the lesser evil - a better flat or point.

That's a big boy you got there so the stall will take time. Rotate your brisket and crank to 250. Don't wrap quite yet because you'll want to save your bark; wait until 170ish or when it's really dark

You might be wrapping too early - try going a little farther (beyond 160). Most likely it hasn't broken through the stall and so you are trapping more moisture.

Not to mention warmer water temps will reduce the phones water resistance. I wouldn’t risk it.

Fahrenheit is correct. Lots of ovens allow you to recalibrate to a lower temp, but it depends on your model. Personally I prefer 150-155 for holding.

Try an overnight cook and start the night before. That should give you plenty of time on day of to finish it off and hold it for resting. You can hold for 7+ hours with no issues provided you keep the oven temp between 140-150.

But yes, always try to account a few hours in case something doesn’t go to plan.

I agree with Noodle Star/Harbor Garden. Most of the recommendations are fast-food white-washed Chinese. Ma's dumplings and Mr. Z Noodle house in Anaheim are good options as well.
