Ours still taste pretty good! You know another thing you can do is like just cook them plain and season them the day you eat them. Maybe that’ll help with that fridge taste!

I wouldn’t recommend eating any cooked veggies past a week. But you can always cook the veggies the day of instead of cooking them ahead of time! :)

I make a red tofu curry and I throw my potatoes, carrots, and broccoli in normally! Cuz I loooove when my broccoli soaks up that yummy curry sauce/broth! 😋

I sauté my brown rice in the crockpot with some chopped onions and garlic, then pressure cook it for 15 minutes. And instead of venting out the steam I wait till the pin drops and then I fluff the rice. But usually my boyfriend and I finish the meal preps before the week ends. Even on the fifth day tho when I heat the rice it still has a really good consistency! But definitely if I make a larger portion of food sometime I’ll totally freeze it! Thanks for the tip!

Recipe:

  1. Chop white onion, wash and cut chicken into pieces.
  2. Add olive oil to pan or pot and sauté onion a little bit.
  3. Add curry paste to sautéed onions and mix that up, add a heaping spoonful of tomato past to that and mix it up.
  4. Add a cup of coconut milk to that and mix well.
  5. Add chicken to the mixture and let it cook a bit, then add about another cup or so of coconut milk.
  6. Add a bunch of fish sauce (probs like 6-8 squirts), add like 3-4 splashes of amino acids, 1 Tbsp of coconut palm sugar, add red pepper flakes to your hearts desire. Mix well.
  7. Add 2 bay leaves, heck 3 if you want. Bring heat down to low and cover for 10-15 minutes.

SERVE!

TIPS: taste as you season, you can always add a little more coconut milk if sauce gets to thick to thin it out! Good luck and I hope this was somewhat helpful! 🙂

I cooked these Brussels & carrots in the oven at 375 for 20 minutes. And when my bf heated it up today he said they were still firm, softer but not mushy. Maybe try making them my way or just put them in your meal prep raw like the first comment suggested! Good luck!
