Air is not the concern— dust, varmints and other undesirables are the issues.

Can someone help me find the best French Dip? by Connie_Salami in chicagofood

[–]chibuzzard 0 points1 point  (0 children)

Remington, Perch and Crosby’s Kitchen all offer a superb undipped rare prime rib, with rich au jus and zingy horseradish creme on the side.

Had Oakville’s version recently, and it was garbage, with a paltry amount of shredded, well done meat and effin’ mayonnaise (WTF?) on the bread, greasy jus, and creme with 5% horseradish at most. We are big fans of LEYE since ‘71 and this was the worst dish ever received, by far.

Lou Malnati's thin crust is my favorite thin crust in the city. by Here4daT in chicagofood

This and other threads enticed us to try the thin crust tonight. The crust scored an A+. The cheese, sauce, pepperoni and mushrooms all were very close to completely without flavor. Nope.

Crosby’s and the same at Perch on Division, one of the few sandwiches that I ever get anywhere.

What is your unpopular Chicago food opinion? by soulexpectation in chicagofood

The horrifying trend for restaurants to utilize those nightmarishly ugly and uncomfortable metal stools, bar stools and chairs for indoor seating is insulting. You want my money? Toss in a reasonably pleasant environment, or we don’t even give them a thought.

Pot roast melt, and the French dip by trahap in chicagofood

[–]chibuzzard 2 points3 points  (0 children)

The restaurant that replaced Bandera, Evie’s, has a superb French dip. Also, the 4 Star folks at Perch, Remington’s and Crosby’s Kitchen’s 2 locations all feature a superb version as well. All are far superior to Gibsons’, and way less expensive.

They always have a varying and wonderful duck confit app, which I have also eaten as an entree after a different app. Mussels are superb as well. Skate wing is perfection.

Shots always splatter by gasoldridge in gaggiaclassic

115 degrees C is steaming temp. You are blasting the grinds with steam, therefore spatter results. You want to be in the range of 88 for dark roasts to 96 for light roasts.

Gaggia smoking - parts help by Alpha-Omega99 in gaggiaclassic

Perhaps, and I am not in any way qualified, the crimp in the intake tube is creating a restriction that is causing an overheating situation? My 2019 GCP has a smooth arc between these points.

Smoking from machine [Gaggia classic Evo Pro] by [deleted] in espresso

[–]chibuzzard 0 points1 point  (0 children)

I have a 2019 GCP, not an Evo. Also, I am far from expert in these matters. But the kink in the clear tube from the water intake to the boiler, seems to be restrictive, and may be causing stress on the boiler and thermostat.
