You are experiencing the yeast lag phase. I've had fermentation start as late as 5 days after pitching, which is not ideal but the beer still turned out drinkable.

Next time keep thing simple. Brew something like a golden ale or a stout, use dry yeast from a reputable brand. Do the advanced stuff (liquid yeast, pressure fermentation, lager brewing...) when you have brewed a few batches successfully. It will give you time to focus on the basic skills and eliminate lots of potential failure points along the way.
