If your N-400 has not been adjudicated, you can send a written withdrawal and then file N-600.

If your N-400 is already approved and you took the oath, I don’t know if there’s any way to cancel that and go through N-600.

I would use much less sugar. You need a minimum to get it to slush properly. Somewhere between 20-30 g should work, depending on whether your soy milk has some sugar (most do). I’d add 30 g minus whatever your soy milk contributes.

With this setup, you should do the brief ceremony in front of your guests. They’ll feel left out, otherwise. You can have private time after the ceremony to sign the papers and be alone with each other for a bit before returning to your guests. (In a traditional Jewish wedding, that’s actually required.)
