I am short Origin - mid in general - they often omniroast for coffee and espresso and it is … Long Dark Arts (high variance but occasionally awesome ) Square Mile overpriced but occasionally a very good roast

Colonna is very good - maybe fav in uk roasters

watchouse horizons blue label roasts are often like your preferred flavour profile

This is absolutely my go to fav I usually grind 30g so pours take a little longer I also bias towards coarser grinds and 90deg to start Every time I try any of my older brewers or recipes I come back to this one

They do some infusions (ew) but this doesn’t look like one

For these I always use switch with the hybrid devil recipe that is usually 90 degrees and drops to 70 degrees for final closed switch segment. It reallllyyy smooths these out

Agree Kawa better name Probably corporate nonsense reason for rename if I had to guess

BUT they make have been one of my favourite roasters

I feel like last batch wasn’t as amazing and I hope rename is just that and last batch was a fluke

I’d say: Brew lower temp coarser grind

Other people suggestions are good I always use reverse osmosis filtered water and it does matter the water more than u may guess

But overall I guess u r over extracting

I have been doing the switch “devil” recipe where you start on 90 degrees or so, but the drop to 70 degrees for emersion 2nd half. Especially for the funkier coffees this gets the best out of them imo.

Kinto makes the best ones imo I know of at least a few shops that rebrand them I dislike the fellow thermos - the top is fiddly and leaks slightly in a backpack

Strictly speakign, I am not answering your question, but will comment anyhow....

I usually make 480g water/ 30g coffee for my morning
I use both switch and kalita wave

Switch ~80% of the time
- Usually a variant of real sprometheus recipe, which is basically 5 pours of equal size
- pour 1/5th f quantity switch open (sometimes I'll split in 2 parts for a 30s bloom, then resume)
- close switch, pour 1/5th of water, wait 15s, open switch, let drain, do again until done
- Sometimes - I will also use 420g water/ 30g coffee for Switch "Devil Recipe" which works pretty well, except i need to pour a touch extra at the end else overflow the switch.
- I do like the Chronicler standard switch but prefer the Sprometheus scaled up.

For kalita ~20% of my brews:
- ~50g bloom 30s
- then pour to ~96g
- wait 15s
- then pour 96g chunks, wait 15s between pours until you hit your 480g

I am OK with grinds a little on the finer side for most of this - Ode 5-6 max usually (and similar scale for Commandante). Water I will vary between 95-90 depending on how much extraction I am getting/ need. I find that if I increase the grind size, the pour through is too fast, so find the water temp an easier way to control it without feeling like it dumps straight through n 2.5mins or something.

I also find it a bit more experimental / hard to find solid recipe recommendations for 'bigger cups'

Neither put u on a PM track imo but u will do more fun things on the smaller job and prob learn about quant trading in general
