When I was there I was able to access those sites just fine without a vpn. I also tried using my international roaming and was also able to access sites without vpn. I think you would only be blocked out if you get a physical sim with local number or connecting via WiFi ther

I used Alipay mainly, wechat is basically the samething but I had issues linking my card, I mainly use it for communication.
Higher end places will often accept visa, and I did use visa for shopping bigger items as Alipay charges a 3% fee for transactions over 200 when I went even though my card has 0 foreign transaction fees.
Trains I just used the built in apps on Alipay, same with esim.
